
LOBSTER INSTITUTE
Through the years, the lobster industry has played a major role in the region's heritage,
culture, and economy. Today, our industry and the resource it depends on are very
healthy throughout New England and the Maritime provinces. As we enter the twenty-first century,
we have some of the largest harvests ever recorded in our history. Many credit the lobster's
bright future, so rare in other fisheries of the world, to the strong conservation ethic practiced for
generations by the men and women of our industry: "Take care of the resource and
its environment and it, in turn, will take care of you."
The Lobster Institute is a cooperative, industry-supported research and education program
based at the
University of Maine. Established in 1987, the Institute represents one way our industry is "taking care"
to ensure the healthy future of our resource. This book was compiled,
in part, to help fund the good work being done by the Institute on behalf
of the lobster industry. A portion of the purchase price of each book
is returned to the Lobster Institute as a royalty.
Our industry is grateful to the women of the lobster industry for coming up
with the idea for this book; for collecting recipes, photos, and stories; and for their
dedication in seeing the project through to its first printing by Yankee Books of Camden.
We also appreciate the fine work done by Jeff Nichols in bringing the new
e-book edition to fruition.
The lobster industry takes great pride in this book, the women of our industry, our
Lobster Institute, and our lobster heritage.
